Raw Beauty Berry Donuts

Ingredients
Donut 'dough':
2 cups cashews2 cups coconut flour
2/3 cup rice malt
3 tbsp coconut cream
1 tbsp coconut oil
2 tbsp Qt Bellē powder
1/2 tsp salt
1/2 tsp vanilla powder
1/2 tsp cinnamon
1/4 tsp nutmeg
Icing:
1 cup cashews1/3 cup maple syrup
1/4 coconut cream
3 tbsp coconut oil
1tbsp Knowrish Well product depending on desired icing colour and flavour:
Toppings:
Plant based sprinkles or freeze dried fruit
Method
- Make the dough first by blitzing the cashews and coconut flour in a food processor until fine. Add the remaining ingredients and blend until it binds into a dough.
- Press the dough into silicone donut moulds and freeze for approximately 30 minutes whilst you make the icing.
- To make the icing, blend all ingredients in a high speed blender (except sprinkles) until silky smooth. Pour into a small bowl.
- Lay a cutting board with some baking paper and proceed to ice each donut by dipping in the icing, allowing to dry on the baking paper. After the first coat place in freezer for a few minutes to set, then proceed with another layer.
- Finish with sprinkles and enjoy. The donuts will keep in the fridge for 2-3 days and in the freezer for up to 2 months in a sealed container.
