Quinoa Risotto (Spiced Pumpkin Curry)

An easy to prepare meal that is not only bursting with nutrition, but also tastes divine! Quinoa Risotto is a newly formulated product which has hit the taste jackpot bigtime, as well as ticking all the boxes in the nutritional department.

Organic quinoa grain (71%), dried pumpkin, pumpkin powder, coconut cream powder, dried green beans, chia seeds (3%), dried onion flakes, coconut sugar, sea salt, turmeric powder (0.8%), onion powder, fennel powder, garlic powder, coriander powder, dried garlic flakes, Black pepper cracked (0.3%), dried chilli flakes, ginger powder (0.2%), dried coriander leaves, food acid (330).

Stove top:

  1. Add 1 packet of Morlife Spiced Pumpkin Quinoa Risotto and 2 cups of water (500ml) in a medium size saucepan and bring to the boil.
  2. Reduce to simmer, add 1 tablespoon of Extra Virgin Olive Oil and stir occasionally to prevent sticking.
  3. Cook until all water is absorbed (aproximately 17-20 mins).

Microwave:

  1. Add 1 packet of Morlife Spiced Pumpkin Quinoa Risotto and 2 cups of water (500ml) in a microwave safe bowl.
  2. Cook on HIGH for 10 minutes at 2 x 5 minute intervals, stirring after every interval.
  3. Add 1 tablespoon of Extra Virgin Olive Oil, stir the mixture and cook for another 5 minutes.
  4. Cover and allow to stand and absorb water for 2-3 minutes before serving.

Try adding sauted pumpkin, green beans, other vegetables and/or lean chicken pieces to your cooked quinoa for a delicious, hearty meal.
